Panko breaded deep fried potato balls stuffed with desiccated coconut, chilli, and cashew. Served with stir-fried couscous topped with nuts, raisins and pomegranate, and a side of grilled veggies.

About the Dish Designer
Shortly after completing his culinary education in India, Naman operated a food truck selling various Indian dishes before a quick progress to opening a restaurant serving high end Indian food, and lastly a café at a college in his hometown in India. While he specialises in Indian vegetarian cuisine, Naman is currently on a journey of exploring new ideas in preparing vegan and vegetarian food, fusing Indian vegetarian cooking with the cuisines of different cultures. He believes that dishes should be kept simple, allowing the flavours of star ingredients to blossom. Despite that, most of his dishes feature a combination of sweetness, spiciness and tang to form flavour bombs that tickle the taste buds.
