About the Dish Designer
Hisham started out as a cook at food stall serving Turkish and Italian dishes before moving on to restaurants that serve Australian cuisine, pastas and burgers. After a few years of kitchen experience, he pursued an education in Culinary Arts, during which he took on apprenticeship roles at fining dining restaurants Jaan, and Equinox, as well as modern Asian restaurant Ding Dong. As a versatile chef who has had experience in various cuisines and enjoys challenges, Hisham created a Japanese inspired dish that has won an All Nippon Airways competition and it’s now being served as one of the in-flight meals of the airline. With a strong foundation in Mediterranean cuisine, Hisham specialises in pastas, protein and healthy dishes that he seasons with aromatic herbs and Mediterranean spices such as parsley, coriander, Zaatar, and Sumac.
