About the Dish Designer
Trained in Western and fusion cuisines as well as the preparation of fish dishes, grilled meats and burgers, Melvin enjoys working with secondary cut meats such as oyster blade and chuck. After mastering the maillard reaction on meats at a restaurant he previously worked at, Melvin is confident in his ability to caramelise the sugar content in the meats he grills to achieve a seared crust. With his culinary background, he serves up dishes that reflects his expertise: fish, meat, and a balance of textures and sweet, smoky and savoury flavours.
